Cheesy Mashed Potato Puffs Recipe


 

Ingredients:

  • 2 cups mashed potatoes (cold, leftover works best)

  • 1 large egg, beaten

  • ½ cup shredded cheddar cheese (or mozzarella/Gruyère)

  • ¼ cup grated Parmesan cheese

  • 2 tbsp chopped chives or green onions

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ¼ tsp black pepper

  • ¼ cup breadcrumbs or panko (for coating, optional)

  • Cooking spray or melted butter (for greasing)

Instructions:

  1. Preheat oven to 375°F (190°C). Grease a muffin tin or line with silicone cups.

  2. Mix the batter:

    • In a bowl, combine mashed potatoes, egg, cheddar, Parmesan, chives, garlic powder, onion powder, and pepper. Mix well.

  3. Shape & coat (optional):

    • Scoop ~¼ cup portions into balls. Roll in breadcrumbs for extra crunch (optional).

    • Press into muffin tin cups or form freehand on a baking sheet.

  4. Bake:

    • Bake 20-25 mins until golden and slightly crispy on top.

  5. Serve warm with:

    • Sour cream, extra cheese, or a sprinkle of paprika!

Tips:

  • Leftover-friendly: Great for holiday mashed potatoes!

  • Add-ins: Try crumbled bacon, jalapeños, or roasted garlic.

  • Air fryer option: Cook at 370°F (190°C) for 10-12 mins, flipping halfway.
