Ingredients
For the Creamy Garlic Chicken:
4 boneless, skinless chicken breasts
Salt and freshly ground black pepper, to taste
1 teaspoon garlic powder
2 tablespoons olive oil
4 cloves garlic, minced
1 cup chicken broth
1 cup heavy cream
½ cup grated Parmesan cheese
1 tablespoon Dijon mustard
1 teaspoon Italian seasoning
1 tablespoon fresh parsley, chopped (for garnish – optional)
For the Roasted Baby Potatoes:
1.5 lbs baby potatoes, halved
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon dried rosemary or thyme
Salt and black pepper, to taste
Instructions
Step 1: Prepare and Roast the Potatoes
Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.
In a mixing bowl, toss the halved baby potatoes with olive oil, garlic powder, rosemary (or thyme), salt, and pepper.
Spread the potatoes out in a single layer on the prepared baking sheet.
Roast in the preheated oven for 25–30 minutes, flipping halfway through, until they’re golden brown and crispy.
Step 2: Sear the Chicken
While the potatoes are roasting, season the chicken breasts with salt, pepper, and garlic powder.
Heat olive oil in a large skillet over medium-high heat.
Add the chicken and sear for about 4–5 minutes per side, or until both sides are golden brown and the chicken is cooked through (internal temperature should reach 165°F or 75°C).
Remove the chicken from the skillet and set aside, keeping warm.
Step 3: Make the Creamy Garlic Sauce
In the same skillet (don’t wipe it clean), reduce the heat to medium. Add the minced garlic and sauté for about 1 minute until fragrant.
Pour in the chicken broth, scraping up any flavorful bits stuck to the bottom of the pan. Let it simmer for 2–3 minutes.
Stir in the heavy cream, Parmesan cheese, Dijon mustard, and Italian seasoning. Allow the sauce to simmer gently for 3–5 minutes, stirring occasionally, until it starts to thicken.
Step 4: Finish the Dish
Return the seared chicken breasts to the skillet, spooning the sauce over them.
Simmer for an additional 2–3 minutes so the chicken can absorb the flavors.
Taste the sauce and adjust seasoning if needed.
