- 1 lb (450g) boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 2 tbsp olive oil or vegetable oil
- 3 cloves garlic, minced
- 1 small onion, finely chopped
- 1/4 cup honey
- 1/4 cup soy sauce (low-sodium recommended)
- 2 tbsp hoisin sauce (optional, for extra flavor)
- 1 tbsp rice vinegar or white vinegar
- 1 tsp sesame oil (optional)
- 1 tsp black pepper
- 1 tsp cornstarch mixed with 2 tbsp water (for thickening)
- 8 oz (225g) noodles (e.g., spaghetti, lo mein, or rice noodles)
- 2 cups chicken broth or water
- 1/4 cup green onions, chopped, for garnish
- Sesame seeds, for garnish (optional)
Instructions:
Prepare the Chicken:
Heat olive oil in a large skillet or pot over medium-high heat.
Add the chicken pieces and cook until golden brown on all sides, about 5-7 minutes. Remove and set aside.
Sauté Aromatics:
In the same pot, reduce the heat to medium. Add minced garlic and chopped onion, sautéing until fragrant and translucent, about 2-3 minutes.
Make the Sauce:
Stir in honey, soy sauce, hoisin sauce (if using), rice vinegar, sesame oil (if using), and black pepper. Let it simmer for 1-2 minutes.
Cook the Noodles:
Add the chicken broth (or water) to the pot and bring it to a boil.
Add the noodles and cook according to package instructions, stirring occasionally to prevent sticking.
Combine Everything:
Once the noodles are almost cooked, return the chicken to the pot.
Stir in the cornstarch slurry to thicken the sauce. Let it simmer for 2-3 minutes until the sauce is glossy and coats the chicken and noodles evenly.
Garnish and Serve:
Remove from heat and garnish with chopped green onions and sesame seeds.
