This Cajun-inspired dish is a delicious combination of shrimp, rice, vegetables, and flavorful spices.

Ingredients:
1 pound shrimp, peeled and deveined
1 pound ground beef or chicken You can also use a combination of both.
1 medium onion, chopped
1 green bell pepper, chopped
2 celery stalks, chopped
2 cloves garlic, minced
2 cups cooked long-grain rice
1 (14.5 ounce) can diced tomatoes, undrained
1 cup chicken broth
2 tablespoons Cajun seasoning
1 teaspoon dried thyme
½ teaspoon black pepper
Salt to taste
2 tablespoons chopped green onions, for garnish
Instructions:
Cook the Meat: In a large skillet or Dutch oven over medium-high heat, brown the ground beef or chicken, breaking it up with a spoon. Drain any excess grease.
Add Vegetables: Add the chopped onion, bell pepper, and celery to the skillet and cook until softened, about 5-7 minutes. Add the minced garlic and cook for another minute, until fragrant.
Add Rice, Tomatoes, and Broth: Stir in the cooked rice, diced tomatoes (undrained), and chicken broth.
Add Seasoning: Add the Cajun seasoning, thyme, black pepper, and salt. Stir well to combine. Bring the mixture to a simmer.
Cook Shrimp: Add the shrimp to the skillet and cook until pink and cooked through, about 3-5 minutes.
Garnish and Serve: Garnish with chopped green onions. Serve hot.
