Cajun Chicken Alfredo with Roasted Broccoli

 


Ingredients

For the Cajun Chicken:
2 large boneless, skinless chicken breasts
1 tbsp Cajun seasoning
1 tbsp olive oil
Salt & pepper to taste
For the Alfredo Sauce:
2 tbsp butter
3 cloves garlic, minced
2 cups milk
1 cup grated Parmesan cheese
1/2 tsp black pepper
Salt to taste
For the Pasta:
8 oz fettuccine or your favorite pasta
For the Roasted Broccoli:
3 cups broccoli florets
1 tbsp olive oil
1/2 tsp garlic powder
Salt & pepper to taste

Directions

Step 1: Preheat
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Step 2: Roast the Broccoli
Toss broccoli with olive oil, garlic powder, salt, and pepper.
Spread on the baking sheet and roast for 20–25 minutes until tender and lightly crispy.
Step 3: Cook the Pasta
Boil pasta in salted water until al dente. Drain and set aside.
Step 4: Cook the Cajun Chicken
Season chicken with Cajun seasoning, salt, and pepper.
Heat olive oil in a skillet over medium heat. Cook chicken 5–6 minutes per side until done. Let rest, then slice.
Step 5: Make the Alfredo Sauce
In the same skillet, melt butter. Add garlic and sauté for 1 minute.
Whisk in milk and simmer for 2–3 minutes. Stir in Parmesan cheese, pepper, and salt. Cook until smooth and creamy.
Step 6: Combine and Serve
Toss cooked pasta in the Alfredo sauce. Top with sliced Cajun chicken and roasted broccoli.
Serve hot and enjoy every creamy, spicy bite!
