Ingredients

1.5 lbs boneless, skinless chicken thighs or breasts (cut into bite-sized pieces)
* 2 tablespoons olive oil or butter

* 2 tablespoons all-purpose flour
* 2 cups low-sodium chicken broth
* 1/2 cup milk (any kind works!)
* 1 teaspoon dried thyme
* Salt and freshly ground black pepper to taste

Direction:

2. **Sear the Chicken:** Heat the olive oil or butter in a large skillet over medium-high heat. Add the chicken pieces and cook until golden brown on all sides. Don't overcrowd the pan; cook in batches if needed. Once browned, remove the chicken from the skillet and set aside on a plate.

4. **Make the Gravy Base:** Sprinkle the flour over the onions and garlic. Stir well to coat everything and cook for 1-2 minutes, letting the flour toast a little. This helps thicken our gravy!
5. **Whisk in the Liquids:** Gradually whisk in the chicken broth, a little at a time, making sure to scrape up any tasty bits from the bottom of the pan. Once all the broth is added, whisk in the milk until smooth.
6. **Simmer and Thicken:** Bring the mixture to a gentle simmer. Add the dried thyme, salt, and pepper. Stir well.
7. **Return the Chicken:** Add the browned chicken pieces back into the skillet. Make sure they're mostly submerged in the gravy.
8. **Cook Until Done:** Lower the heat to medium-low, cover the skillet, and let it simmer for about 15-20 minutes, or until the chicken is cooked through and tender. The gravy should have thickened nicely. If it's too thick, you can add a splash more milk or broth. If it's too thin, let it simmer uncovered for a few more minutes.
9. **Serve with Love:** Taste and adjust seasoning if needed. Spoon the comforting chicken and gravy over mashed potatoes, rice, or your favorite biscuits. Garnish with fresh parsley if you like!
