Ingredients
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 cup cold unsalted butter, cubed
- 1 cup shredded sharp cheddar cheese
- 2 tablespoons chopped fresh herbs (chives, parsley, thyme, or a combination)
- 3/4 cup milk
- 1 egg, beaten, for egg wash
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, baking powder, salt, and black pepper until evenly combined.
- Add the cold, cubed butter to the flour mixture and work it in using a pastry cutter or your fingertips until the mixture resembles coarse crumbs.
- Stir in the shredded cheddar cheese and chopped fresh herbs, distributing them evenly throughout the mixture.
- Make a well in the center and pour in the milk. Gently stir just until the dough comes together, taking care not to overmix.
- Turn the dough out onto a lightly floured surface and knead gently a few times until cohesive.
- Pat the dough into a 1-inch-thick circle and cut into 8 equal wedges.
- Arrange the wedges on the prepared baking sheet, leaving space between each one. Brush the tops lightly with the beaten egg.
- Bake for 15 to 20 minutes, or until the scones are golden brown and baked through.
- Transfer to a wire rack and allow to cool slightly before serving warm.
