Cream Filled Golden Loaf

 


Ingredients 

For one 9×5-inch (23×13 cm) loaf (10 slices):

  • 3 ripe bananas, mashed
  • 1/2 cup (115 g) unsalted butter, melted
  • 3/4 cup (150 g) granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups (180 g) all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon (optional)

Optional Additions

  • Chopped walnuts or pecans
  • Chocolate chips
  • Blueberries
  • A swirl of peanut butter or Nutella

Tips for Success

  1. Use very ripe bananas: The darker the peel, the sweeter and more flavorful the bread.
  2. Do not overmix: Stir just until combined to keep the bread tender.

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a bowl, mix mashed bananas and melted butter.
  3. Stir in sugar, eggs, and vanilla until smooth.
  4. In a separate bowl, whisk flour, baking soda, salt, and cinnamon.
  5. Add dry ingredients to wet ingredients and gently mix until just combined.
  6. Pour batter into the prepared pan and smooth the top.
  7. Bake for 55–60 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
