Ingredients:
2 cups mashed potatoes (cold, leftover works best)
1 large egg, beaten
½ cup shredded cheddar cheese (or mozzarella/Gruyère)
¼ cup grated Parmesan cheese
2 tbsp chopped chives or green onions
½ tsp garlic powder
½ tsp onion powder
¼ tsp black pepper
¼ cup breadcrumbs or panko (for coating, optional)
Cooking spray or melted butter (for greasing)
Instructions:
Preheat oven to 375°F (190°C). Grease a muffin tin or line with silicone cups.
Mix the batter:
In a bowl, combine mashed potatoes, egg, cheddar, Parmesan, chives, garlic powder, onion powder, and pepper. Mix well.
Shape & coat (optional):
Scoop ~¼ cup portions into balls. Roll in breadcrumbs for extra crunch (optional).
Press into muffin tin cups or form freehand on a baking sheet.
Bake:
Bake 20-25 mins until golden and slightly crispy on top.
Serve warm with:
Sour cream, extra cheese, or a sprinkle of paprika!
