Apple Pie Biscuits

 


Ingredients:

For the Biscuits:

  • 2 cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • 3/4 cup buttermilk (plus more for brushing)

For the Apple Pie Filling:

  • 2 medium apples, peeled and diced (Granny Smith or Honey crisp)
  • 2 tablespoons unsalted butter
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch

Instructions:

1️⃣ Preheat the Oven:
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.

2️⃣ Make the Apple Pie Filling:
In a medium saucepan, melt the butter over medium heat. Add the diced apples, sugar, cinnamon, nutmeg, and lemon juice. Stir to combine. Cook for about 5-7 minutes, until the apples start to soften.
In a small bowl, mix the cornstarch with 2 tablespoons of water to form a slurry. Add this mixture to the apples and cook for another 2-3 minutes, until the filling thickens. Set aside to cool.

3️⃣ Make the Biscuit Dough:
In a large bowl, combine the flour, sugar, baking powder, and salt. Add the cold, cubed butter and use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
Make a well in the center and pour in the buttermilk. Stir until just combined, being careful not to overmix.

4️⃣ Form the Biscuits:
Turn the dough out onto a lightly floured surface and knead it gently a few times until it comes together. Roll the dough out to about 1/2-inch thick.
Using a round biscuit cutter or the rim of a glass, cut out rounds of dough.

5️⃣ Assemble the Apple Pie Biscuits:
Place half of the biscuit rounds onto the prepared baking sheet. Spoon a generous amount of the apple pie filling onto each biscuit. Top with the remaining biscuit rounds, gently pressing the edges to seal.

6️⃣ Brush with Buttermilk:
Brush the tops of the biscuits with a little extra buttermilk to help them brown nicely while baking.

7️⃣ Bake the Biscuits:
Bake for 15-18 minutes, or until the biscuits are golden brown and puffed up.

8️⃣ Cool and Serve:
Allow the biscuits to cool slightly before serving. Serve warm, and enjoy the perfect combination of flaky biscuit and sweet apple pie filling!
