Ingredients
1 cup white rice (short or medium grain is best)
2 cups water
4 cups whole milk
¾ cup sugar
¼ teaspoon salt
2 eggs, lightly beaten
1 teaspoon vanilla extract
1 teaspoon ground cinnamon (optional)
½ teaspoon nutmeg (optional)
2 tablespoons butter
¼ cup raisins (optional)
Extra cinnamon or sugar for topping
Instructions
Cook the rice
- In a medium saucepan, bring water to a boil. Add rice and cook until tender, about 12–15 minutes. Drain any excess water.
Heat the milk mixture
In another large saucepan, combine the cooked rice, milk, sugar, and salt. Cook over medium-low heat for 20–25 minutes, stirring frequently, until thick and creamy.Temper the eggs Slowly add a small amount of the hot rice mixture to the beaten eggs while whisking continuously. Then pour the egg mixture back into the saucepan.
Add flavor Stir in the butter, vanilla, cinnamon, nutmeg, and raisins (if using). Cook for another 2–3 minutes until fully thickened
Broil the top
Transfer the pudding to an oven-safe dish. Sprinkle a little cinnamon or sugar on top. Place under the broiler for 2–3 minutes until the top is lightly golden and toasted.
Cool & serve Let it cool slightly before serving. Serve warm or chilled.
