For the Bread:

  • 1 ½ cups all-purpose flour

  • 2 tsp baking powder

  • ⅛ tsp salt

  • ½ cup butter, softened

  • ¼ cup granulated sugar

  • 2 large eggs

  • 1 cup crushed pineapple (drained, reserve liquid)

  • ¼ cup reserved pineapple liquid

  • 2 tbsp milk

For the Glaze:

  • 1 cup confectioners sugar

  • 2 tbsp reserved pineapple liquid

  • 1 tsp vanilla extract

Directions

Step 1: Prep Your Oven

Preheat your oven to 350°F (175°C). Grease a standard loaf pan or line it with parchment paper for easy removal.

Step 2: Mix Dry Ingredients

In a medium bowl, sift together flour, baking powder, and salt. This ensures your bread will rise evenly.

Step 3: Cream Butter & Sugar

In a large mixing bowl, beat softened butter and sugar until creamy and light. This is the base that makes your loaf tender and flavorful.

Step 4: Add Eggs

Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next.

Step 5: Combine Wet & Dry

Alternate between adding the dry flour mixture and the reserved pineapple liquid to the butter mixture. Stir gently after each addition to keep the batter light.

Step 6: Add Pineapple & Milk

Stir in the crushed pineapple and milk until just combined. Be careful not to overmix.

Step 7: Bake

Pour the batter into your prepared loaf pan. Smooth the top with a spatula and bake for 50–55 minutes, or until a skewer inserted in the center comes out clean.

Step 8: Cool & Glaze

Let the bread cool in the pan for 10–15 minutes, then transfer to a wire rack. Mix together the glaze ingredients until smooth, then drizzle generously over the cooled loaf. Allow the glaze to set before slicing.
