Ingredients:
1 (3 to 4 lb) pork loin roast
2 tbsp olive oil
4 garlic cloves, minced
1 tsp dried rosemary
1 tsp dried thyme
1 tsp salt
½ tsp black pepper
2 lbs baby potatoes, halved
2 tbsp melted butter
1 tsp garlic powder
1 tbsp fresh parsley, chopped (optional for garnish)
Directions:
Preheat your oven to 375°F (190°C).
In a small bowl, mix olive oil, minced garlic, rosemary, thyme, salt, and pepper.
Rub the mixture all over the pork loin and let it sit for 10 minutes.
In a large bowl, toss the halved potatoes with melted butter and garlic powder.
Place the pork loin in the center of a baking dish and spread the potatoes around it.
Roast uncovered for 1 hour, or until the pork reaches an internal temperature of 145°F (63°C).
Let the pork rest for 10 minutes before slicing.
Sprinkle chopped parsley over the potatoes for a fresh touch.
