Ingredients
For one 9×5-inch (23×13 cm) loaf (10 slices):
- 3 ripe bananas, mashed
- 1/2 cup (115 g) unsalted butter, melted
- 3/4 cup (150 g) granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 1/2 cups (180 g) all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp ground cinnamon (optional)
Optional Additions
- Chopped walnuts or pecans
- Chocolate chips
- Blueberries
- A swirl of peanut butter or Nutella
Tips for Success
- Use very ripe bananas: The darker the peel, the sweeter and more flavorful the bread.
- Do not overmix: Stir just until combined to keep the bread tender.
- Measure flour correctly: Spoon and level for best results.
- Check doneness early: Ovens vary; test with a toothpick.
- Let it cool: Cooling helps the loaf set and enhances flavor.
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
- In a bowl, mix mashed bananas and melted butter.
- Stir in sugar, eggs, and vanilla until smooth.
- In a separate bowl, whisk flour, baking soda, salt, and cinnamon.
- Add dry ingredients to wet ingredients and gently mix until just combined.
- Pour batter into the prepared pan and smooth the top.
- Bake for 55–60 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
