Crockpot Angel Chicken is an easy, creamy dish made with chicken breasts, cream cheese, and Italian dressing mix, perfect for serving over pasta or rice.
Ingredients
Chicken Breasts: Boneless and skinless
Cream of Chicken Soup: 1 can
Cream Cheese: 8 oz, softened
Butter: 1/2 cup
Chicken Broth: 1 cup
Italian Dressing Mix: 1 packet (dry seasoning)
Optional: Serve over angel hair pasta (or whole wheat pasta), or cauliflower rice
Instructions
Prepare the Chicken: Place the boneless chicken breasts in the bottom of the slow cooker in a single layer.
Make the Sauce: In a medium saucepan, combine the cream of chicken soup, cream cheese, butter, chicken broth, and Italian dressing mix. Heat over medium until the cream cheese is melted and the mixture is smooth.
Combine: Pour the creamy sauce over the chicken in the slow cooker, ensuring the chicken is well coated.
Cook: Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until the chicken is tender and fully cooked (internal temperature of 165°F).
Serve: Once cooked, you can shred the chicken with two forks and stir it into the sauce. Serve over cooked angel hair pasta, or cauliflower rise for a comforting meal. Make it a complete meal by adding frozen peas in the last 30 minutes-- or several handfuls of fresh baby spinach in the last 10- 15 minutes- just until the spinach wilts.
