Ingredients:
1 (20 oz) can crushed pineapple, well drained
8 oz cream cheese, softened
1 cup powdered sugar
1 (8 oz) container whipped topping, thawed
1 teaspoon vanilla extract
1 cup mini marshmallows
1/2 cup sweetened shredded coconut (optional)
1/2 cup chopped pecans or walnuts (optional)
Instructions:
In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
Add the powdered sugar and vanilla extract, and beat until well combined and fluffy.
Gently fold in the whipped topping until fully incorporated.
Stir in the drained crushed pineapple.
Fold in the mini marshmallows, and coconut and nuts if using.
Cover and refrigerate for at least 1 hour to chill and thicken before serving.
Stir lightly before serving.
