This one-pan comfort dish is rich, cheesy, and packed with bold flavor—savory sausage, pillowy tortellini, and fresh spinach all coated in a silky Alfredo sauce that clings to every bite. It’s cozy, indulgent, and comes together in the most satisfying way.
Ingredients:
20 oz cheese tortellini (fresh or refrigerated)
1 lb Italian sausage (mild or spicy), casings removed
1 tbsp olive oil
3 tbsp butter
4 cloves garlic, minced
1 cup heavy cream
¾ cup whole milk
1¼ cups freshly grated parmesan cheese
2 cups fresh spinach
Salt & black pepper, to taste
½ tsp Italian seasoning
Optional: red pepper flakes, parsley, extra parmesan
Instructions:
Cook the tortellini: Boil tortellini according to package instructions. Drain and set aside.
Cook the sausage: In a large skillet over medium heat, cook sausage in olive oil, breaking it up into crumbles, until browned and fully cooked. Remove excess grease if needed and set aside.
Make the Alfredo sauce: In the same skillet, melt butter. Add minced garlic and sauté for about 1 minute until fragrant. Pour in heavy cream and milk, stirring well. Let it simmer gently for 3–4 minutes.
Add the cheese: Stir in parmesan and let it melt into a smooth, creamy Alfredo sauce. Season with salt, pepper, and Italian seasoning.
Add the spinach: Toss in fresh spinach and cook until wilted.
Bring it all together: Return cooked sausage and tortellini to the skillet. Gently toss until everything is coated in the creamy sauce and heated through.
Garnish and serve: Top with parsley, extra parmesan, and red pepper flakes for a little heat if desired. Serve hot and creamy.
Why It Works:
The rich Alfredo sauce wraps around every piece of cheesy tortellini, while the sausage adds bold, savory depth. Spinach brings a fresh balance to the richness—making this dish the perfect blend of indulgent and comforting in every bite.
