Crab and Shrimp Seafood Bisque



- 1 lb shrimp, peeled and deveined

- 1 lb lump crab meat

- 4 tbsp butter

- 1 onion, diced

- 2 cloves garlic, minced

- 1/4 cup all-purpose flour

- 4 cups seafood stock

- 1 cup heavy cream

- 1/4 cup dry sherry

- 1/2 tsp paprika

- Salt and pepper to taste

- Chopped parsley for garnish


1. In a large pot, melt the butter over medium heat. Add the diced onion and minced garlic, and sauté until softened, about 5 minutes.

2. Sprinkle the flour over the onion and garlic mixture, stirring constantly for about 2 minutes to make a roux.

3. Slowly pour in the seafood stock, stirring constantly to avoid lumps. Bring to a simmer and cook for about 10 minutes until slightly thickened.

4. Add the shrimp and crab meat to the pot, and simmer for an additional 5-7 minutes until the seafood is cooked through.

5. Stir in the heavy cream, dry sherry, paprika, salt, and pepper. Taste and adjust seasoning if needed.

6. Allow the bisque to simmer for another 5 minutes to let the flavors meld together.

7. Serve hot, garnished with chopped parsley.
