Cheesy Mashed potato puffs

 



Ingredients:

2 cups mashed potatoes (leftover or freshly made)

2 large eggs

½ cup shredded cheese (cheddar, mozzarella, or a mix)

¼ cup grated Parmesan cheese

¼ cup all-purpose flour (or breadcrumbs for extra crispiness)


2 tbsp chopped chives or green onions (optional)

½ tsp garlic powder

½ tsp salt (adjust to taste)

¼ tsp black pepper

1 tbsp melted butter (for richness)

Instructions:

Preheat Oven: Set to 200°C (400°F). Grease a muffin tin or line with silicone liners.

Mix Ingredients: In a bowl, combine mashed potatoes, eggs, cheeses, flour, chives, garlic powder, salt, and pepper. Stir well.

Fill Muffin Tin: Spoon the mixture into the muffin cups, filling each about ¾ full. Smooth the tops slightly.

Bake: Bake for 20–25 minutes, or until golden and crispy on top.

Cool & Serve: Let them cool for a few minutes, then gently remove. Serve warm with sour cream or dipping sauce.
