Ingredients:
1 lb imitation crab meat (or real crab meat), shredded or chopped
½ cup mayonnaise (adjust to taste)
1 tbsp lemon juice
1 tsp Dijon mustard (optional)
½ cup celery, finely diced
¼ cup red onion, finely diced
2 tbsp fresh parsley or dill, chopped
Salt and pepper to taste
Instructions:
In a bowl, combine the shredded crab meat, celery, red onion, and fresh herbs.
Add mayonnaise, lemon juice, Dijon mustard (if using), salt, and pepper. Mix well.
Chill in the fridge for at least 30 minutes to let the flavors meld.
Serve on lettuce, crackers, sandwiches, or as a side dish.
