Honey-Glazed Pistachio Crusted Feta

 


Ingredients:

8 oz brie cheese, cut into bite-sized cubes
1/2 cup shelled pistachios, finely chopped
1 sheet puff pastry, thawed
1 egg, beaten (for egg wash)
1/4 cup cranberry sauce
2 tablespoons honey
1 teaspoon fresh thyme leaves (optional)

Directions:

Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
Roll out the puff pastry and cut into small squares slightly larger than the brie cubes.
Place a brie cube in the center of each pastry square. Fold the pastry over the brie to form a small parcel, sealing the edges. Brush with beaten egg.
Roll or sprinkle the top of each pastry parcel with finely chopped pistachios.
Bake for 15–20 minutes, or until the pastry is golden brown and puffed.
While the bites are baking, combine cranberry sauce and honey in a small saucepan over low heat until smooth and slightly thickened. Remove from heat.
Drizzle the cranberry honey glaze over the baked brie bites and sprinkle with fresh thyme if desired. Serve warm.
