Crispy Rice Krispie Chocolate Chip Cookies
Ingredients
- 1 cup butter, softened
- 1 cup brown sugar
- 1 cup granulated sugar
- 2 teaspoons vanilla extract
- 2 large eggs
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 2 cups rolled oats
- 2 cups Rice Krispie cereal
- 1–2 cups semi-sweet chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and baking soda. Set aside.
- In a large bowl, beat the butter, brown sugar, and granulated sugar until light and fluffy, about 2–3 minutes.
- Add the eggs and vanilla extract, mixing until fully combined.
- Gradually add the dry ingredients to the wet mixture, mixing just until incorporated.
- Gently fold in the rolled oats, Rice Krispie cereal, and chocolate chips until evenly distributed.
- Scoop dough onto the prepared baking sheet, spacing cookies about 2 inches apart.
- Bake for 9–10 minutes, until edges are lightly golden but centers remain soft.
- Allow cookies to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
