Preheat and Roast Potatoes: Preheat your oven to 400°F (200°C). Toss cubed potatoes with olive oil, salt, and pepper. Spread evenly on a baking sheet and roast for 20-25 minutes, or until golden brown and tender.
Combine Ingredients: In a large bowl, mix roasted potatoes with crumbled bacon, 1 ½ cups of cheddar cheese, sour cream, and half of the green onions until evenly combined.
Assemble and Bake: Transfer the mixture to a greased 9×13-inch baking dish. Drizzle the melted butter evenly on top. Sprinkle the remaining ½ cup cheddar cheese over the top. Bake for 15-20 minutes, or until the cheese is melted and bubbly.
Garnish and Serve: Remove from the oven and sprinkle with the remaining green onions. Serve hot and enjoy.
