Ingredients
To make this easy slow cooker potato recipe, you only need three main ingredients:
- 2 pounds baby red potatoes (cut into bite-sized chunks)
- 1 cup bottled Italian dressing
- ½ cup grated Parmesan cheese
Optional additions (for extra flavor):
- 2 cloves garlic, minced
- 1 teaspoon black pepper
- Fresh parsley for garnish
Prep Time, Cook Time & Servings
- Prep Time: 10 minutes
- Cook Time: 4–5 hours (LOW) or 2–3 hours (HIGH)
- Total Time: Up to 5 hours
- Servings: 4–6
Instructions
Start by washing your potatoes thoroughly. There’s no need to peel them, especially if you’re using red potatoes—the skin adds texture and nutrients.
Cut the potatoes into evenly sized chunks to ensure they cook evenly in the slow cooker.
Place the chopped potatoes into your slow cooker. Make sure they are spread out evenly for consistent cooking.
Next, pour the Italian dressing over the potatoes. This step is key—the dressing not only adds moisture but also infuses the potatoes with herbs, oil, and tangy flavor.
Sprinkle the grated Parmesan cheese on top. If you’re using garlic or black pepper, add them at this stage as well.
Gently toss everything together so the potatoes are well coated.
Cover the slow cooker with the lid and cook on LOW for 4–5 hours or HIGH for 2–3 hours. Avoid opening the lid too often, as this releases heat and can slow down the cooking process.
Once the potatoes are fork-tender, give them a gentle stir before serving.
Finish with freshly chopped parsley if desired.
